Ghanaian Yam & Spinach Stew (Abomu)

There's nothing quite like the taste of a delicious yam and spinach stew made with love by mum. The combination of tender yams and earthy spinach creates a hearty and flavourful dish that is sure to warm your soul. The aroma of the stew cooking on the stove is enough to make your mouth water, and it's the perfect comfort food to enjoy at any time of the day. Mum's recipe is full of rich, savoury flavours that are sure to satisfy any appetite. Each bite is like a warm hug from mum, reminding you of all the love and care she pours into every meal.

Ingredients

1 Tubar of Yam

3 Salted Tilapia

2 Scotch Bonnet

2 Large Avocado

1 Tbsp Peanut Butter

4 Bunches of Spinach leaves

1 Green Banana

4 Eggs

2 Tomatoes

1 Cube of momoni 

1 Bunch of Turkey Berries

1 Red Onion

Half a cup of Palm Oil

Preparation

Step 1

Let the salted tilapia soak in a bowl of cold water overnight.

Step 2

Before cooking your spinach and turkey berries, make sure to wash the leaves thoroughly to remove any dirt or debris. Once clean, add them to a large pot and pour in half a litre of water. Place the pot on medium heat and cook until the leaves have softened to your liking.

Step 3 

To prepare the dish, start by removing the skin from the yam and cutting it into cubes. Next, place the yam cubes into a pot filled with water to about halfway. Peel the skin off the green banana and slice it before adding it to the pot with the yam. Cook the mixture on medium heat until the yam and banana have softened. Towards the end of the cooking time, add the eggs to the pot and add some scotch bonnet for extra flavour. 

Step 4

Place the salted tilapia into a pot and pour in enough water to cover it. Heat the pot on medium and cook until the tilapia has become tender. Grill the tomatoes until slightly charred.

Step 5

Grab a mortar and pestle and start mashing the spinach, turkey berries, and scotch bonnet. Slice half of the red onions into the paste and add salt to taste. Once you've achieved the desired consistency, mix in a teaspoon of peanut butter and mash it into the paste.

Step 6

Begin by heating the palm oil over medium heat, and once it's hot, toss in the red onions and saute them for a little bit. Once they're softened, introduce the momoni to the mix to infuse the base with its distinct flavour. 

Step 7 

To prepare this dish, first, slice the avocado and eggs and add them to the bed of fresh spinach. Drizzle some palm oil over the top, and add pieces of salted tilapia for a delicious and satisfying meal. Enjoy! Slice the avocado and eggs and add to the spinach. Bonus Tip

For maximum flavour, ensure that your avocado is perfectly ripe.
